NSW Food Safety Supervisor Recertification: Your New Route to Compliance

If you run a food business in New South Wales (NSW), you need to be aware of an important change to Food Safety Supervisor (FSS) recertification rules.

On 1 March 2026, the NSW Food Authority introduced new rules to make Food Safety Supervisor training more consistent across the state. Food Safety Supervisors in NSW must complete their recertification with the same training provider from start to finish.

In the past, Food Safety Supervisors could combine units from different training providers or use previous qualifications to shorten the course. While this offered flexibility, it also created inconsistencies in how food safety skills were assessed.

If your designated Food Safety Supervisor’s certificate is close to expiring, it is important to understand these new rules so your business stays compliant.

The new rules are designed to simplify the recertification process and establish consistency. Now, the training provider that issues your certificate must deliver and assess all required units of competency.

For food businesses, this means clearer requirements and fewer grey areas during inspections.

The key rule you need to know

Under the updated regulations, you must complete all required units with the same Registered Training Organisation (RTO).

This rule applies to both:

  • First-time Food Safety Supervisor certification
  • Food Safety Supervisor recertification

The following options are no longer accepted for new enrolments:

  • Credit transfer from another provider
  • Recognition of prior learning (RPL)
  • Upgrade pathways using units completed elsewhere

There is one exception. If you completed the prerequisite unit with the same training provider within the past five years, it may still be accepted.

What training is required for NSW Food Safety Supervisor recertification?

The required training depends on the type of food business as there are two different industry options to choose from.

Hospitality

Supervisors working in restaurants, cafés, bars and other hospitality venues must complete two units of competency together:

Both units must be delivered and assessed by the same training provider.

Retail

Supervisors working in retail settings such as supermarkets, bakeries or convenience stores usually only need to complete one unit of competency as part of the recertification process:

  • SIRRFSA001 – Handle food safely in a retail environment

If you are unsure which category your business falls under, it is a good idea to check with your local council.

What if you already completed one unit of competency somewhere else?

Under the previous system, many Food Safety Supervisors in NSW completed one Hospitality unit of competency through the Food Handling Certificate course (Level 1) and later added the second through the Food Safety Supervisor course (Level 2).

Under the new rules, that upgrade is only allowed if the original unit was completed with the same provider.

If the earlier unit came from a different training organisation, you will usually need to complete both units again together as part of a new training program - Food Safety Supervisor course (Level 1 & 2).

What happens if a NSW Food Safety Supervisor Certificate expires?

If a NSW Food Safety Supervisor Certificate expires and has not been renewed according to the updated rules, your business may not meet NSW food safety requirements.

During inspections, Environmental Health Officers can ask to see proof that your nominated Food Safety Supervisor:

  • Has a valid Food Safety Supervisor Certificate
  • Meets NSW Food Authority requirements
  • Completed training the correct industry option (e.g. Hospitality or Retail)

If the certificate does not meet the new standards, the business could receive warnings, improvement notices or further regulatory action.

Keeping Food Safety Supervisor certification up to date helps protect your business and shows customers that food safety is taken seriously.

A simple way to stay compliant

If your NSW Food Safety Supervisor Certificate is close to expiring, the easiest approach is to start the renewal process early.

A typical renewal process looks like this:

  1. Check when your current certificate expires
  2. Enrol in an approved NSW Food Safety Supervisor recertification course
  3. Complete all online learning and assessments
  4. Receive your new Statement of Attainment and updated NSW Food Safety Supervisor Certificate
